Quick Dinner Idea for a Family
There are three major food groups in my husband’s life. That being cheese, carbs and protein. And all three just happen to come together into a beautiful melody of flavor in this lasagna recipe. Thus being the number one reason why lasagna is a favorite of his.
And my favorite part? How easy it is to make!
Everyone needs a quick meal to make when they’re in a hurry to get supper on the table. Or when they get sucked into working in the garden and next thing you know, it’s 6:00pm and you don’t know what you’re going to eat for dinner. That has happened to me more than I’d like to admit. And to be honest, one can only have taco night just so many times. I’m always on the hunt for simple, healthy recipes.
This lasagna recipe is my go-to because it doesn’t require fancy ingredients or complicated steps. No need to gather up fresh herbs. Or make your own marina sauce from scratch. There is nothing fussy about this meal! Fussiness is not welcome on the Christy Homestead. We don’t have time for such things.
Freezer Friendly Meal
Another reason why I love this homemade lasagna recipe is that is freezes well. When I was first married, I began making freezer meals for my husband to take to work. After making up a few delicious meals from the Happy Money Saver, I began searching for some new easy freezer meal ideas that I could add to my recipe box. My Mom, the original creator of this lasagna recipe, shared it with me and said “it’s super easy and tasty”. I gave it a try and have never looked back. I simply toss the ingredients together, bake it, cut it into squares, wrap the lasagna in foil and place it in the deep freeze. When my husbands needs a quick meal to take to work, he can grab a square and go. Easy on both of us!
So without further ado, here is the simple lasagna recipe.
How to Make Lasagna
Makes: 10 servings
Ingredients
2 lbs ground beef
1 medium onion
1 teaspoon salt
1/2 teaspoon pepper
24 oz jar spaghetti sauce
24 oz cottage cheese
16 oz mozzarella
1/3 cup parmesan
9 lasagna noodles
Directions
Preheat oven to 375° F.
In a large stockpot, bring water to a boil. Add lasagna noodles and cook until softened.
Meanwhile, in a large skillet over medium heat, add the oil and onions. Sauté until the onions have softened and begun to brown.
Add the hamburger to the skillet and cook until no longer pink. Season with salt and pepper. Pour the entire jar of spaghetti sauce over the hamburger. Stir to combine.
To assemble the lasagna, start by arranging 3 cooked noodles in the bottom of a 9×13 pan. Spread 1/3 of the ground beef mixture over the noodles. Cover with a 1/3 of the cottage cheese. Sprinkle with 1/3 of the mozzarella and parmesan. Repeat two more times (a total of 3 layers) ending with the cheese.
Bake for 40 minutes until bubbly and the cheese has browned. Serve and enjoy! Leftovers can be cut into individual portions and frozen.
