That is what every dessert should be, am I right?

In our household, we love to make treats sweetened with fruit juice. Our apple pie recipe is sweetened with fruit and apple juice concentrate. The jams and fruit butters that we make at home do not include any added sweeteners. And of course, I love sweetening our popsicles and smoothies with juice and fruits. I am always on the lookout for another new recipe made with wholesome ingredients and little to no sugar.

We’ve never had much success at growing blueberries on the homestead. The plants are finicky and prefer acidic soil, which is not what we have here on our property or my parent’s land. So instead, we head down to a local blueberry farm in Indiana to purchase boxes and boxes of blueberries to eat, bake with and freeze so that we can have blueberries year around.

Now that it is officially blueberry season, that means I am back in the kitchen whipping up a variety of blueberry desserts without sugar and preserving the berries for future use. One of our favorite simple dessert recipes that we make often, is a fruit juice sweetened blueberry crisp. It pairs well with grilled chicken, roast or baked steak. The crisp is an easy weeknight dessert but can also be doubled to take to a summer cookout.

Sugarless Blueberry Crisp Recipe

Makes: one 8×8, about 6 servings

Ingredients to Make Blueberry Crisp

Filling

4 – 4 1/2 cups frozen or fresh blueberries
1 cup (8 oz) apple juice concentrate
1.5 Tbs cornstarch

Topping

1/2 cup wheat flour
1/2 cup all purpose flour
1/2 cup quick oats
4 Tbs (1/2 stick) melted butter
1/2 – 1 tsp cinnamon
Pinch of salt

How to Make Blueberry Crisp

Preheat the oven to 400 degrees.

To make the filling for the blueberry crisp, pour the berries into a large heat proof bowl and set aside. Next, pour the cold apple juice concentrate into a small saucepan. Whisk in cornstarch. Turn heat to medium high and bring to a boil. Cook until thickened. Pour mixture over blueberries and stir to coat completely. Spoon filling into an even layer in an  8” x 8” baking dish.

In a medium size bowl, combine both flours, quick oats, cinnamon and salt. Drizzle melted butter over mixture and stir until some small clumps appear. Sprinkle topping over the berries.

Bake the blueberry crisp for 30 minutes or until golden brown and the filling begins to bubble. Serve warm as is or with a drizzle of cream or a scoop of vanilla ice cream.

Homemade Blueberry Crisp Tips

Change things up a bit by adding fresh sliced peaches to the blueberry crisp! Or swap the berries completely for fresh raspberries.
