As a mom, much of my time is dedicated to taking care of my daughter, playing with her, cooking and cleaning the house and all of the usual responsibilities of a homemaker. While cooking is a mandatory task, baking is optional but definitely a pleasure to do.
Easy brownies with fresh milled flour are my go-to choice when I need a last minute dessert idea. They are great for when you’re in a pinch and need a treat to serve for dinner or bring to a friends house.
This brownie recipe requires no planning ahead of time. Nor does it call for any speciality ingredients. Just a mixing bowl, a baking pan and about 10 minutes of time is all you need.
While cooking can sometimes feel like a chore — meal planning, grocery shopping, remembering to set out a package of meat to thaw — baking is satisfying and filled with joy.

What Type of Flour is Best for Brownies?
When milling grains at home, I find that it is best to use freshly milled soft white wheat for baked goods such as brownies. Soft white wheat is known as a pastry flour and has high moisture and low protein content making it the perfect choice for fudgy brownies with fresh milled flour or cookies and other pastries.
What Makes Brownies Fudgy vs Cakey?
The main difference between fudgy and cakey brownies is the amount of fat such as butter and the use of leavening agents like baking powder. These chocolate brownies with fresh milled flour use a large amount of butter and chocolate (high fat-to-flour ratio) and no baking soda or baking powder.
Tips for Making Brownies With Fresh Milled Flour
- Dutch process cocoa powder creates a rich, deep chocolate flavor. However, regular cocoa powder or even cacao powder will make a delicious fresh milled flour dessert recipe.
- Even though espresso powder is an optional ingredient, if you have it on hand, I recommend using it. The addition of espresso powder in brownies creates a more chocolatey taste.
- Don’t over mix the batter.
- Do not over bake the brownies. They will be dry! A time range is given because every oven bakes a little different. It is better to slightly underbake than to bake for too long and create a dry, crumbly brownie.
- When you insert the toothpick into the brownies, it should come out with a few moist crumbs.

Butter – A higher amount of fat in this fudgy brownie recipe is what makes them rich, dense and decadent. But honestly, can ever have enough butter, am I right?
Sugar – Just enough sugar to make these brownies with fresh milled flour sweet but not over the top.
Cocoa Powder – Gives this brownie the deep brown color and the luscious chocolate flavor you know and love.
Eggs – Add fat, moisture and help create a fudgy structure for these fresh milled brownies.
Vanilla – Adds a slight sweetness to the baked good.
Salt – Enhances the flavor of the brownies while also balancing the sweetness. I like to use sea salt or pink Himalayan salt.
Espresso Powder – Creates more of an intense chocolate flavor without giving the brownies a coffee taste. This is my favorite brand to use.
Soft White Wheat Flour – Perfect for making tender baked goods!
Chocolate Chips – I prefer to add semi sweet chocolate chips to our brownies. They give the brownies an extra creamy and rich chocolate flavor. If you don’t have them on hand, chocolate chunks will work as well.
Easy Brownies With Fresh Milled Flour
Makes: 9-12 servings
Only one bowl and a handful of simple pantry ingredients is needed to make these incredibly moist and delicious fudge brownies with fresh milled flour.
Ingredients
3/4 cup butter, softened
1 cup sugar
3/4 cup cocoa powder
3 eggs
2 teaspoons vanilla extract
1/2 teaspoon salt
1/2 teaspoon espresso powder, optional
1 1/4 cups freshly milled soft white wheat flour
1 cup semisweet chocolate chips
Directions
Preheat oven to 350° F.
In a large bowl add softened butter and sugar. Mix until light and fluffy. Next combine, cocoa powder, eggs, vanilla, salt and espresso powder, if using. Add flour and mix until smooth. Stir in chocolate chips.
Pour into a greased 9” x 13” pan. Spread batter into an even layer. Bake for 25-30 minutes or until a toothpick is inserted into the brownie and only a few moist crumbs are attached. Cool brownies on a wire rack. Serve and enjoy!
