Christmas time calls for fancy food! Sure there is stuffing, turkey or ham (depending on your preference), rolls, desserts, fruit cakes, side and salads but all of these delicious dishes are often served for lunch or sometimes supper time. This begs to ask the question, “what about breakfast?”.

I’ll admit our breakfast meals aren’t always fancy. I usually wake in the morning and am in a hurry to get food on the table and the baby fed. However, come the weekend or a special occasion like Christmas, I enjoy taking time to create a delicious Christmas breakfast menu.

This year I decided to stay with the cozy and warm winter theme and whipped up some gingerbread waffle batter. The gingerbread waffle recipe included warm spices such as ginger, cinnamon, nutmeg and cloves as well as a splash of molasses to give the waffles the traditional gingerbread we all know and love. The base of the batter uses whole milk, plenty of butter and of course freshly milled flour.

This lightly sweetened waffle was the perfect Christmas breakfast food for our family. Even our dear friend stopped by and was delighted to test out the new waffle recipe. As a food blogger, I am never in short supply of willing food testers!

What Type of Flour is Best for Waffles?

When making healthy gingerbread waffles with fresh milled flour, soft white wheat is the best type of flour to use. With low gluten formation and a small amount of protein, it create tender, soft waffles. Spelt grains also work well for this simple gingerbread waffles recipe.

How to Make Gingerbread Waffles

With a little love, a couple spoonfuls of molasses, a handful of spices and freshly milled flour, you’ll have the best gingerbread waffles to serve your family this winter season! Scroll below for the complete gingerbread waffle recipe.

Makes: approximately 20 4-inch waffles

Ingredients

3 – 3 1/4 cups freshly milled soft white wheat flour
3 eggs
3/4 cup butter (1 1/2 sticks), melted
2 2/3 cups milk
2 tablespoons baking powder
3/4 teaspoon salt
2 1/2 teaspoons ginger
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
1/8 teaspoon cloves
3 tablespoons molasses

Directions

Preheat the waffle iron. Add the eggs into a large bowl. Using a whisk, beat the eggs until fluffy. Mix in butter, milk and molasses. Add the remaining dry ingredients and whisk until smooth.

Using a measuring cup, pour the batter into a waffle maker and cook according to the manufacturers instructions. (Our waffle maker takes about 4-5 minutes.)

Remove waffles from iron. Place on a wire rack while you finish making the rest of the waffles.

To serve, place a couple of waffles on a plate. Add butter, cream, syrup or any other desired toppings. Leftovers can be stored in a freezer safe bag.
