While surfing Pinterest one night, I stumbled upon an image of these meat stuffed rolls sprinkled with poppy seeds. The photograph made my mouth water and crave a slice of pizza. Inspired by their recipe, I had an epiphany that I could turn our beloved pizza recipe into pepperoni pizza rolls.
I took our favorite fresh milled flour pizza dough recipe and enriched it with an egg, butter and a drizzle of honey. After the dough had risen, I rolled out the dough and slathered it with sauce, a few handfuls of pepperoni and plenty of shredded mozzarella. Baked to a golden brown perfection and drizzled with a robust garlic butter, these pizza pinwheels satisfied my craving and filled my family’s bellies.

What is the Best Grain for Pizza Flour?
I find that pizza dough made with fresh milled flour is best made with hard wheat flour. Hard red is our favorite but hard white wheat berries will work just as well. Ancient grains, spelt and kamut also make terrific pizza dough. They give a depth of flavor that traditional white flour cannot compare to.

How to Make Pizza Rolls With Fresh Milled Flour
Prepared with enriched fresh milled pizza dough and packed with your favorite pizza toppings, these pepperoni pizza rolls are a filling and delicious meal.
Serves: 6
Ingredients
Pizza Dough
1 1/2 cups warm water
1/4 cup butter, melted
1 tablespoon honey
1 1/2 teaspoons salt
1 egg
4 1/2 cups freshly milled hard red wheat flour
1 tablespoon instant yeast
Filling
1/2 cup pizza sauce
6 ounces pepperoni slices
2 cups shredded mozzarella
Topping
2 tablespoons butter, melted
1/4 teaspoon garlic powder
Directions
In the bowl of a stand mixer, combine the warm water, butter, honey, salt and egg. Add 3 cups of flour and mix until a wet batter forms. Add yeast and mix to combine.
Add the remaining 1 1/2 cups of flour. Knead the dough for about 8-10 minutes. Cover the bowl, place in a warm spot and let rise for 1 hour or until doubled.
Turn dough out onto a floured surface. Roll into an 16” x 12” inch rectangle. Brush pizza sauce over the dough, leaving about a 1/2 inch of space around each side. Add a layer of pepperonis. Sprinkle cheese over top. Rolling from the long side, roll the dough tightly into a cylinder until you reach the other side. Place seam side down. Use a knife to cut the roll into 12 even slices.
In a greased 9” x 13” pan, arrange the pizza roll slices. Cover pan and allow to rise until the rolls have doubled in size, about 45 minutes to 1 hour.
Preheat oven to 375° F. Bake the rolls for 25-28 minutes, until the rolls and cheese are a nice golden brown. Remove from oven.
Mix melted butter and garlic powder together. Using a pastry brush, brush rolls with mixture. Serve warm.
