On our homestead, I wear many hats. Small business owner, gardener, wife, cook, dog walker and homemaker. Part of homemaking is baking from scratch meals and desserts for my family.

I wasn’t always keen on cooking and baking. It was my mom who taught me how to bake a batch of cookies. To roast a chicken. To fry okra. Or cook up a pot of soup.

I’m grateful she took the time to show me the ins and outs of homemaking. Now I am able to not only make a healthy meal to feed my small family, I can also share with all of you my recipes and new creations.

This recipe for cheesy breadsticks with fresh milled flour is just that — a new recipe, a twist on the classic breadstick, should I say. It starts with a basic dough, then gets filled with butter and two kinds of tasty cheese. I usually intend for these breadsticks to be served with a meal but somehow they never make it there. They are nearly gobbled up before supper is served.

Given their unique twisted design, they also make for an excellent shareable side or snack for holidays and get togethers.

What are Breadsticks Made of?

Water – preferably filtered or spring water

Freshly Milled Hard Red Wheat Flour – contains a high amount of protein to help ensure the soft breadsticks rise well. Hard red wheat gives these cheesy breadsticks a rich, sweet taste. If you don’t have any hard red wheat berries on hand, you can swap it out in equal proportions for hard white wheat.

Oil – organic olive oil or sunflower oil both work well in this recipe. Butter or melted lard can also be used. Just make sure you are using the right measurements if you decide make a substitution.

Salt – we love to use sea salt in most of our cooking and baking recipes.

Yeast – Instant yeast help to quickly create a fluffy, soft breadstick.

Butter – You can never have too much butter, in my opinion. The addition of butter makes for a moist, rich breadstick. Unsalted works best, if you have it on hand.

Cheddar Cheese – Mild, medium or sharp adds great flavor to this bread recipe. Check below for cheese and flavor variation ideas if you’d like to change up the taste.

Parmesan – Powdered or freshly grated parmesan cheese works well in this whole wheat breadsticks recipe.

How to Make Breadsticks With Fresh Milled Flour

Cheddar paired with sharp parmesan then twisted into a delicious cheese breadstick recipe makes a great snack for both kids and adults. Follow the step-step guide below to start making this fresh milled flour bread recipe!

Makes: 12 breadsticks

Ingredients

1 1/2 cups warm water
4 cups freshly milled hard red wheat flour
1/4 cup oil
1 1/2 teaspoons salt
1 tablespoon instant yeast
1/4 cup butter, melted
1 cup grated cheddar
1/2 cup plus 2 tablespoons grated parmesan

Directions

In a mixing bowl, combine the water, oil and salt. Add 2 cups flour and mix until a batter forms. Sprinkle yeast over top and continue to mix. 

Slowly add remaining flour to form the dough. Knead dough for 7 to 8 minutes. Let rise in a warm place for 1 hour.

Divide dough into 2 equal portions. Using a rolling pin, roll each piece into a 12-inch by 10-inch rectangle. Using a pastry brush, carefully brush 2 tablespoons of melted butter on one of the rectangular dough pieces. Sprinkle with cheddar and 1/2 cup of parmesan cheese. Use a rolling pin to gently press the cheese into the dough.

Using a pizza cutter, cut the cheesy dough into 12 strips. Repeat process by cutting the second rectangular dough piece into 12 narrow strips. To shape the breadsticks, take one piece of the plain dough and one strip of the cheesy dough and twist together, pinching the ends to seal. Place breadsticks on prepared baking sheets. Let rise in a warm place for 20-25 minutes, until puffed and full looking.

Preheat oven to 400° F. Bake fresh milled breadsticks in oven for 14-15 minutes, until golden brown.

Remove from oven and brush with remaining 2 tablespoons of melted butter. Sprinkle with the last 2 tablespoons of parmesan. Serve and enjoy!

Breadstick Variations

Add a sprinkle of Italian seasoning and a pinch of garlic powder during step 3. Roll into the dough along with the cheeses.

Give the breadsticks a slight bit of heat by adding about 1/8 teaspoon of cayenne powder over the layer with cheese.

Switch up the cheese by replacing cheddar with grated mozzarella. 

How Do You Store Cheese Breadsticks?

Breadsticks with fresh milled flour are best served immediately or eaten the day they were made. Leftovers can be stored at room temperature in a sealed container for a couple of days. If you need to store them for a longer period of time, you can place the cheese breadsticks into the fridge but do expect them to dry out fairly quickly.
