Everyone loves snacks in our household. We almost always have a little nibble of something between meals. A snack is a must after a long afternoon of work in the homestead, especially come summer time. Weeding, planting and harvesting just makes me hungry!
To save money and make sure we are getting adequate nutrition in our bodies, I like to make most of our snacks at home. And crackers are no different. A box of health-ish crackers from the store is a piggy bank breaker. So why not make them from scratch in the kitchen?
These crackers using fresh milled flour are made with plenty of herbs and seasoning with a salty crunch on top. You can’t beat the flavor! I love to eat them as a pick-me-up during the afternoon or sometimes in the evening but I think they’d also make a wonderful addition to soup or served on a cheese platter or charcuterie board.

Tips
- Sprinkle the crackers with sea salt for an extra crunch and salty flavor. Before baking, I like to toss the salt on top of the crackers and then gently roll the salt into the dough with a rolling pin.
- Parchment paper is extremely helpful in this recipe. It helps prevent sticking and allows you to bake the crackers in one giant square instead of having to separate each individual cracker.
- Why are my homemade crackers not crispy? The most likely culprit of a soft cracker is due to underbaking or not rolling the dough thin enough. Do consider baking times can vary depending on your oven and how thick the cracker is.
- I prefer to use a rolling pin to roll out the garlic and herb crackers but if you have a cracker roller or a pasta roller, this can make the task even easier.
- Be sure to trim off the edges of the square, as these thinner, misshaped pieces of dough can bake and burn before the rest of the crackers have fully baked.

Ingredients to Make Healthy Homemade Crackers
Fresh Milled Flour – I prefer to use spelt in this recipe but soft white wheat will also work well!
Baking Powder – A leavening agent used to give the crackers a tiny rise and great texture.
Salt – This recipe for crackers with fresh milled flour calls for a bit of salt inside the cracker with a sprinkle of coarse sea salt on top for crunch and saltiness. My favorite brand is light grey Celtic sea salt.
Herbs – Both sage and Italian seasoning give these homemade crackers a terrific flavor but if herbs aren’t your thing, they can be removed altogether for a more traditional sea salt cracker.
Garlic Powder – Enhances the overall flavor of the cracker.
Water – Helps to hydrate the flour to form into a dough.

Recipe Variations
- Switch up the herbs and spices! Try thyme, basil, onion powder or don’t add any and just leave the cracker as a delicious sea salt cracker.
- Add a few teaspoons of ground flaxseed to the dry ingredients. You may need to add an extra tablespoon or two of water to account for the added flaxseed.
- Skip the additional coarse sea salt and enjoy the healthy homemade crackers as is.

How to Make Homemade Crackers From Scratch
Makes: Approximately 100 crackers
Ingredients
2 1/2 cups freshly milled spelt or soft wheat flour
1/4 teaspoon baking powder
1/2 teaspoon salt
1/4 teaspoon sage
1/4 teaspoon garlic powder
1 1/4 teaspoons Italian seasoning
1/2 cup warm water
1/4 cup olive oil
Coarse sea salt for sprinkling
Directions
Preheat oven to 400° F.
In a bowl, combine the flour, baking powder, salt, sage, garlic powder and Italian seasoning. In a separate bowl, whisk together the water and oil. Add the liquid mixture to the flour and mix together. If the dough appears dry, use your hands to knead the dough until it comes together to form a cohesive ball.
Turn the dough out onto a clean surface and continue to knead about 10 to 15 times until smooth. Divide the dough in half. Place one half on a piece of parchment paper and cover the remaining half with plastic wrap or a towel to prevent it from drying out. Use a rolling pin to roll the first half into a square, 1/8 inch thick. Using a pizza wheel cutter, trim the edges to make a perfect square. Cut the square into 2 inch rows to shape your crackers. Sprinkle with coarse sea salt.
Slide the parchment paper with the crackers onto a baking sheet. Bake for 18-23 minutes, until the crackers are golden brown and firm to the touch. As the crackers cool, they will become crunchy. Remove the crackers from the oven and slide them off onto a cooling rack. Once cooled, snap apart along the cut lines.
Repeat steps 2 and 3 with remaining half of dough. The crackers can be stored in an airtight container.
