When I want a healthy snack for my family, I turn to this baked cheese crackers recipe. My daughter and husband love them and they are easy to prepare.

Recipe Variations

How to Make Homemade Cheese Crackers

Makes: about 128 crackers

Ingredients

1 2/3 cups (6.25 ounces) gouda, gruyère or cheddar cheese, shredded
1 cup freshly milled soft wheat flour or spelt
1/2 teaspoon salt
6 tablespoons butter, cut into small pieces
2 1/2 tablespoons water

Directions

Preheat oven to 350° F.

In a food processor, add shredded cheese, flour and salt. Process until combined. Sprinkle pieces of butter over top and continue to process until it looks like like clumpy wet sand. Drizzle water and pulse processor about 5 times until dough begins to come together.

Remove dough from food processor and divide in half. Wrap each piece into plastic wrap and place in the fridge for 10-15 minutes.

Working with one piece of dough at a time, remove plastic wrap and place on a piece of parchment paper. Place a second piece of parchment paper on top and use a rolling pin to roll dough into a square, 1/8-inch thick. Using a pizza wheel cutter, trim the edges to make a perfect square. Then cut crackers into about 1 inch by 1 inch squares.

Transfer crackers to prepared baking sheet. The crackers will not spread out much so they can be placed close together. Using a toothpick of skewer, poke a hole through the center of each cracker. Repeat process with remaining dough.

Bake for approximately 18 minutes. Remove from oven and allow to cool on baking sheet for a couple of minutes. Transfer to cooling rack and cool completely before serving.
