Homemade Graham Crackers
Makes: 8 servings
Ingredients
1/2 cup sucanat or organic brown sugar
8 tablespoons butter, softened
2 teaspoons vanilla
1/2 cup cocoa powder
3 cups fresh milled soft white wheat flour
3/4 teaspoon cinnamon
1/4 cup raw honey
1/2 cup milk
1 1/2 teaspoons baking powder
1/2 teaspoon salt
Directions
Preheat oven to 350° F. Adjust oven racks to the upper and lower third levels. Line two baking sheets with parchment paper.
In a stand mixer, mix softened butter and sucanat until creamy and combined. Add vanilla and cocoa powder and mix together.
In a separate bowl, whisk together the honey and milk until the two become one and the honey dissolves.
Using another bowl, whisk together flour, cinnamon, baking powder and salt. Add this to the sugar mixture 1 cup at a time, alternating with the milk mixture being sure to mix well after each addition.
Turn dough onto a piece of parchment paper and shape into a disk. Cut disk in half, setting aside the second piece. Place a second piece of parchment paper on top and use a rolling pin to roll dough into a rectangle, 1/8-inch thick. Using a pizza cutter, cut into rectangles, approximately 2-inches by 3-inches. Transfer to prepared baking sheet. Using a fork, prick the dough.
Repeat process with remaining dough. Bake in oven for 15-17 minutes, rotating the baking sheets from the top to the bottom and from front to back halfway through the baking time. Baking time will vary depending on how thick your graham cracker is and what kind of oven you are using. Crackers are done when they are slightly puffed and you can smell chocolate.
Remove from oven and allow to cool on baking sheet for a couple of minutes. Transfer to cooling rack and cool completely before serving. Crackers will be soft when removed from oven but should firm up as they cool. Store crackers in an airtight container.
