If you’ve followed my blog for awhile, you know that I am all about healing and maintaining a healthy digestive system. This is the primary reason I started adding more fermented foods, bone broth and whole grains into our diet. One day while surfing the internet, I discovered the gut healing benefits of dehydrated beef gelatin powder.

Sounds a little gross though, doesn’t it?

Thankfully beef gelatin is flavorless and colorless and does not taste like you’re licking a slab of cow! Well, I digress.

Gelatin, a jelly-like substance is stocked full of gut healing protein and amino acids like glycine and proline. It makes a great addition to popsicles, marshmallows and other sweet treats. But since we don’t eat much sugar in our household, I wondered how could I get this gelatin into our bodies without making a sugary snack?

Enter the berry fruit snack.

This fruit gummy recipe contains only fruit, fruit juice and good ol’ beef gelatin. It makes for an excellent, sugar-free snack or dessert at home or on-the-go. To make the berry fruit gummies, I poured them into small silicone molds but if you don’t have those on hand, a mini muffin cup will work fine.

What is Gelatin?

Gelatin is a flavorless protein that is obtained from collagen taken from pieces of an animal. Generally gelatin comes from cows or pigs when you boil bones, tendons, hide or ligaments in water for a long period of time. Ingredients

1/4 cup beef gelatin
1 cup apple juice
2 cups frozen berries (mixed berries or just strawberry, blueberry or raspberry)

Supplies

Silicone mold or mini muffin cups

Directions

In a glass measuring cup add 3/4 cup of apple juice. Sprinkle gelatin over top and allow to bloom for about 5 minutes.

Place a small saucepan on the stove over medium low heat. Add the remaining apple juice (1/4 cup) and mixed berries. Bring to a boil then turn heat to low. Cover and cook for 5 minutes until berries are completely thawed. Remove pan from heat and allow to cool for 5 minutes.

Carefully pour berry mixture into a blender and puree. Return berries to saucepan over low heat. Whisk in gelatin until completely dissolved.

Pour mixture into silicone molds or mini muffin cups. Place in the fridge for about 30 minutes to 1 hour or until set. Pop the fruit gummies out of the mold and enjoy! Refrigerate any leftovers.
