It’s nearly summer time here in Ohio. The weather has finally warmed up. The garden has been planted. And fresh strawberries are now ripe for the pickin’. Strawberry season means many things to our little homestead. Preserving, drying and freezing is just the start. An abundance of sweet and tart strawberries also means dessert time! Strawberry tarts. Strawberry shortcake. Strawberry ice cream. Strawberry cupcakes. Strawberry yogurt. Strawberry lip gloss. Strawberry mousse. Strawberry milk. Strawberry lemonade.

There is much lip smacking going on in the Christy household when strawberry season hits.

One of our favorite strawberry desserts is sweet strawberry pie. This homemade dessert is far from your standard pie with a pastry crust and strawberry filling. Instead this pie recipe starts with a graham cracker crust. It’s then topped with a smooth cream cheese filling, fresh strawberries and a drizzle of jam. My favorite part of this homemade strawberry pie recipe is that it is super easy. Plus you don’t have to heat up your oven for very long and risk filling your kitchen with too much warmth on a hot summer day. 

How to Make Strawberry Pie

Makes: one 9 inch pie

Ingredients

14 sheets of Graham crackers
6 Tbs butter, melted
1 package (8 ounces) cream cheese, softened
1/2 cup sour cream
3 Tbs fructose or sugar
1/2 tsp vanilla extract
3-4 cups of fresh strawberries with the tops cut off
1/3 cup melted strawberry jam

How to Make a Pie

Heat oven to 350° F. Place the graham crackers in a food processor until they are finely ground. Pour the ground crackers into a bowl and stir in the melted butter. Press into a 9 inch pie pan and bake for 5 minutes or until the crust is set. Remove from oven and cool completely.

While the crust is cooling, use a stand mixer (or a hand mixer) to beat the cream cheese, sour cream, sugar and vanilla until smooth. Pour the filling over graham cracker crust and gently spread.

Remove the tops of the strawberries. Arrange each strawberry, tip end up, on top of the cream cheese filling.

Melt the jam and brush over the strawberries. Serve.

  • 1/3 cup melted strawberry jam

Instructions
