Ingredients
2 cups freshly milled soft white wheat flour (see substitutions below)
1 teaspoon cinnamon
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
6 fresh very ripe bananas
1 stick (8 tablespoons) butter, melted
2 eggs
1 teaspoon vanilla extract
1/4 cup old fashioned rolled oats
1/3 cup sunflower seeds or walnuts, optional
How to Make Banana Bread With Whole Grains
Preheat oven to 350° F.
Using a large mixing bowl, combine the flour, baking powder, baking soda, salt and cinnamon. Set aside.
In a microwave safe bowl, add the bananas. Cover with a lid and microwave for 5 minutes, until the bananas have released their liquid. Remove bowl from microwave and mash bananas using the back of a spatula or a potato masher. Set a strainer over a bowl and pour bananas and liquid into strainer. Allow bananas to drain for 15 minutes, stirring and pressing bananas occasionally. When finished you should have approximately 3/4 cup to 1 1/2 cups of liquid depending on how moist and ripe your bananas are.
Transfer mashed bananas into a large bowl. In a small saucepan over medium heat, add banana juice. Cook, reducing liquid to 1/3 cup. Pour liquid into bowl with mashed bananas. Mix in melted butter, eggs and vanilla. Fold in oats and sunflower seeds or walnuts.
Grease an 8 x 4-inch bread pan. Scrape batter into pan. Bake for 40-45 minutes, until a toothpick or knife inserted into the center comes out clean. Remove bread from oven and cool in pan for 10 minutes. Transfer to a wire rack to finish cooling. Slice and serve.
