Sweltering does not even describe the type of summer we’ve had this year. We went from a cold, damp spring and jumped head first into summer with hot weather and near record humidity levels.

To keep us cool, hydration and cold treats are a must. A popsicle is always a welcome treat. And while I love checking out all the new frozen treats while shopping the isles at Costco, I am never very impressed with their ingredients. Even in the organic items.

The next best and much more healthy thing to do is to make a frozen dessert at home. But not just any pop, a probiotic popsicle made with nutrient-rich milk kefir!

A few years ago I shared a recipe for fudge pops made with kefir. But this summer, considering it is the middle of berry season, I thought I’d try something fruity.

Enter in the blueberry cheesecake kefir popsicle. Delightful. Delectable. And oh so delicious!

The frozen pops are made up of two mouthwatering layers, a rich and thick, cream cheese layer and a sweet and tart blueberry layer. A simple knife is used to create the beautiful swirl effect you see in the photographs. However, for a quicker version of these healthy kefir popsicles, you can just blend everything together into a blender and pour into some plastic or metal popsicle molds.

Can You Freeze Kefir for Popsicles?

Yes! You can mix milk kefir with chocolate, cream cheese, frozen fruit, cinnamon, coffee and other ingredients to make a delicious kefir popsicle. In this recipe for blueberry cheesecake kefir popsicles, you simply mix together kefir, fruit and a few other items for a simple and healthy treat.

What are Good Probiotic Snacks?

Tips

  • Using a small blender or food processor helps make everything very smooth in this creamy blueberry popsicle.
  • If you don’t want to swirl the cream cheese layer into the blueberry layer, put everything together in a blender and blend until smooth. The popsicles will have a light purple color and will taste amazing.
  • Use a knife, bamboo skewer, thin dowel rod, chopstick or even the end of a long iced tea spoon to swirl the cream cheese and blueberry layers together.
  • Popsicle molds should be used for this cheesecake popsicle recipe. If you decide to swirl the layers, they may not hold up if you’re using paper cups.

Kefir Popsicle Ingredients

Blueberries – fresh or frozen work in these blueberry kefir popsicles so that you can make them at any time of the year.

Honey or Agave Nectar – No need to heat up the sweetener to dissolve it. The blender will help mix it all together so that the raw honey retains its beneficial properties.

Cream Cheese – You can’t make cheesecake without cream cheese.

Kefir – A half cup gives this probiotic popsicle recipe a healthy dose of gut healthy bacteria while also adding a slight tang.

Easy Blueberry Cheesecake Popsicles

Makes: 10 popsicles (depending on the popsicle mold size)

Ingredients

1 3/4 cups fresh or frozen blueberries
3 tablespoons honey or agave, divided
8 ounces cream cheese, softened
1/2 cup kefir
1/2 cup whole milk
1/2 cup heavy cream
1 teaspoon vanilla

Directions

In a small blender or food processor, mix together the blueberries and 1 tablespoon of honey. Blend until juicy and smooth. Remove from blender and set aside.

Using the same blender, add remaining 2 tablespoons of honey, cream cheese, kefir, milk, cream and vanilla. Puree for approximately 20-30 seconds, until smooth and and slightly thickened.

Set out popsicle molds. Alternately layer blueberry mixture and cream cheese mixture into molds. Use a long, thin knife or chop stick to create swirls by drawing the utensil up and down. Add popsicle sticks and place in freezer until firm.

To remove kefir pops from mold, place under warm water until loosened. Enjoy!

FAQ

Does Kefir Lose Benefits if Frozen?

No, it does not. The probiotics in milk kefir go dormant while frozen and “wake up” again once thawed.

How Do You Make Popsicles Creamy and Not Icy?

Adding full fat ingredients like cream cheese, whole milk and heavy cream help to prevent popsicles from becoming icy and flavorless. The small amount of liquid sweetener (honey or agave nectar) also can fend off icy crystals from forming in the blueberry cheesecake kefir popsicle.
